Yaki Udon Sauce:
- 2 tablespoons dark soy sauce
- 2 tablespoons oyster sauce
- 1 tablespoon mirin
- ½ tablespoon brown sugar
- ½ teaspoon rice wine vinegar
- 1 teaspoon chili paste optional, or substitute with red chili flakes
Yaki Udon Noodles:
- 13 –16 oz udon noodles
- 1 tablespoon coconut oil
- 2 –3 cups stir-fry vegetables e.g., broccoli, carrots, celery, bok choy, snow peas, mushrooms
- 2 stalks scallions sliced
Prepare the Sauce: In a small bowl, whisk together the dark soy sauce, oyster sauce, mirin, brown sugar, rice wine vinegar, and chili paste (if using). Set aside.
Cook the Noodles: If using fresh udon noodles, separate them gently. For dried or frozen noodles, cook according to the package instructions, then drain and rinse with cold water to stop the cooking process.
Stir-Fry the Vegetables: Heat the coconut oil in a large skillet or wok over medium-high heat. Add the stir-fry vegetables and cook for 3–5 minutes, stirring frequently, until tender-crisp.
Combine the Ingredients: Add the cooked udon noodles to the skillet with the vegetables. Pour the prepared sauce over the noodles and vegetables. Toss everything together, ensuring the sauce coats the noodles and vegetables evenly.
Finish with Scallions: Add the sliced scallions to the skillet and toss briefly to combine.
