Ingredients
  

For the Pudding Base

  • 1 cup Heavy whipping cream
  • 2 cups Whole milk Can use non-dairy alternatives for vegan version.
  • 3/4 cup Granulated sugar Can substitute with sugar substitute if desired.
  • 1/4 cup Cornstarch Ensure gluten-free.
  • 6 large Egg yolks
  • 1/4 teaspoon Salt
  • 1 tablespoon Vanilla bean paste (or extract) Use extract as an easy substitution.

For the Spices and Flavoring

  • 1 strip Orange peel Fresh is best.
  • 4 whole Whole cloves Can substitute with ground cloves.
  • 1 stick Cinnamon stick Ground cinnamon can be used.
  • 2 whole Anise pods Use anise extract if unavailable.
  • 5 whole Allspice berries Ground allspice is a good alternative.

For the Brandied Whipped Cream

  • 1 tablespoon Unsalted butter Keep it soft.
  • 1 cup Whipped cream Heavy cream is recommended.
  • 2 tablespoons Brandy (or bourbon) Omit for non-alcoholic version.

Instructions
 

Infusion and Cooking

  • In a small saucepan, combine heavy whipping cream, orange peel, whole cloves, cinnamon stick, anise pods, and allspice berries. Heat gently until it simmers then remove from heat and let cool for 20-30 minutes.
  • In another saucepan, whisk together granulated sugar, cornstarch, and a pinch of salt. Add egg yolks and blend until smooth. Gradually incorporate whole milk, whisking thoroughly.
  • Strain the infused cream into the milk mixture. Cook the combined mixture over medium-low heat, stirring constantly until it thickens and begins to bubble.
  • Once it bubbles, remove from heat and strain again. Whisk in softened unsalted butter, vanilla bean paste, and brandy until creamy.
  • Pour the pudding into serving containers. It can be enjoyed warm, at room temperature, or chilled.

Whipped Cream Preparation

  • In a mixing bowl, whip heavy cream until soft peaks form. Gradually add powdered sugar and a pinch of salt, then stir in brandy to taste.
  • Serve the brandied whipped cream generously on top of each pudding portion.

Notes

For a vegan version, use plant-based options and ensure cornstarch is gluten-free. Adjust spices to your personal taste.
