Ingredients
  

  • 2 tablespoons olive oil
  • 2 medium onions thinly sliced
  • 2 teaspoons sugar for caramelizing onions
  • 3 cloves garlic minced
  • 450 g wild mushrooms e.g., cremini, shiitake, or oyster, sliced
  • 1 teaspoon of fresh thyme chopped (or ½ teaspoon of dried thyme)
  • 1 bay leaf
  • 1.5 liters vegetable broth or chicken broth for non-veg variation
  • 250 g kale stems removed and chopped
  • Salt to taste
  • Fresh cracked black pepper to taste
  • 1 tablespoon soy sauce optional, for umami flavor

Instructions
 

  • Caramelize the Onions : Heat olive oil in a large pot over medium heat. Cook for 10-15 minutes until the onions are soft and caramelized.
  • Sauté Garlic and Mushrooms : Add the minced garlic to the pot and sauté for 1 minute until fragrant. Stir in the sliced wild mushrooms and cook for 5-7 minutes until they release their moisture and begin to brown.
  • Season and Simmer : Add the thyme and bay leaf to the pot. Add the vegetable broth and stir to combine. Bring the soup to a gentle boil, then lower the heat and let it simmer uncovered for 15 minutes.
  • Add the Kale : Stir in the chopped kale and let it wilt into the soup, cooking for another 5 minutes.
  • Enhance the Flavor : Add soy sauce for an extra layer of umami flavor (optional).
  • Serve Hot : Remove the bay leaf before serving. Ladle the soup into bowls and enjoy it warm with crusty bread or on its own.
