- 2 medium onions thinly sliced
- 2 teaspoons sugar for caramelizing onions
- 3 cloves garlic minced
- 450 g wild mushrooms e.g., cremini, shiitake, or oyster, sliced
- 1 teaspoon of fresh thyme chopped (or ½ teaspoon of dried thyme)
- 1 bay leaf
- 1.5 liters vegetable broth or chicken broth for non-veg variation
- 250 g kale stems removed and chopped
- Salt to taste
- Fresh cracked black pepper to taste
- 1 tablespoon soy sauce optional, for umami flavor
Caramelize the Onions : Heat olive oil in a large pot over medium heat. Cook for 10-15 minutes until the onions are soft and caramelized.
