Ingredients
  

  • 1 large beetroot cooked and peeled
  • 2 bananas
  • 175 g oats
  • 3 tablespoons maple syrup
  • 100 g nuts a mixture of almonds and hazelnuts, or your choice
  • 70 g nuts roughly chopped (a mixture of almonds and hazelnuts, or your choice)
  • 70 g mixed berries fresh or frozen – blackcurrants, blueberries, or redcurrants work well
  • 45 g oats
  • 50 g seeds a mixture of linseeds, pumpkin, and sunflower seeds
  • 1 tablespoon maple syrup
  • 3 tablespoons plant milk oat, soy, or nut milk

Instructions
 

  • Preheat the Oven: Preheat your oven to 350°F (180°C) and line a baking dish (approximately 8x8 inches) with parchment paper, leaving some overhang for easy removal.
  • Prepare the Bottom Layer:
  • o In a food processor, blend the cooked and peeled beetroot with the bananas until smooth and well combined.
  • o Add the oats, maple syrup, and nuts to the beetroot-banana mixture. Pulse until everything is well combined and you have a thick, sticky mixture.
  • o Press the mixture firmly into the prepared baking dish, creating an even layer for the base.
  • Prepare the Top Layer:
  • o In a large bowl, combine the roughly chopped nuts, mixed berries, oats, and seeds.
  • o Drizzle with the maple syrup and plant milk. Stir everything together until well mixed and the oats and seeds are coated.
  • Layer the Top Mixture:
  • o Spread the berry and nut mixture evenly over the bottom layer in the baking dish. Press down gently to ensure it sticks to the base layer.
  • Bake the Energy Bars:
  • o Place the baking dish in the preheated oven and bake for 25-30 minutes, or until the top is golden and the bars are firm to the touch.
  • o If using frozen berries, you may need to bake for an additional 5-10 minutes to ensure the bars set properly.
  • Cool and Slice:
  • o Remove the dish from the oven and allow the bars to cool completely in the pan.
  • o Place the bars on a cutting board and slice into squares or rectangles.
  • Serve and Store:
  • o Enjoy the bars immediately, or store them in an airtight container in the refrigerator for up to a week. These bars also freeze well for longer storage.
