- 12 ounces solid white albacore tuna drained
- 1/3 cup mayonnaise adjust to taste
- 1/4 cup finely chopped red onion
- 1/4 cup finely chopped celery
- 1/4 cup finely chopped banana pepper rings
- 2 teaspoons lemon juice
- Salt & pepper to taste
- 4 slices sourdough bread
- 8 slices of tomato
- 8 slices of provolone cheese
Prepare the Tuna Mixture: In a medium-sized bowl, combine the drained tuna, mayonnaise, red onion, celery, banana peppers, and lemon juice. Mix until evenly combined. Season with salt and pepper to taste. Feel free to adjust the mayonnaise level to your preferred creaminess.
Assemble the Sandwiches: Lay out the four slices of sourdough bread. Divide the tuna mixture evenly onto each slice. Top each with two slices of tomato and then two slices of provolone cheese.
