- 4 boneless skinless chicken breasts
- 2 medium tomatoes sliced
- 1 cup about 120g fresh mozzarella cheese, sliced
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- Salt and pepper to taste
- Fresh basil leaves for garnish (optional)
- Balsamic glaze for drizzling (optional)
Preheat Oven: Preheat your oven to 400°F (200°C). Coat a baking dish with a thin layer of olive oil.
Prepare Chicken: Place the chicken breasts on a cutting board. Using a sharp knife, make horizontal cuts along the top of each breast, spaced about 1/2 inch apart, cutting about 75% through the meat but not all the way. These cuts create pockets for the filling.
Season the Chicken: Brush each chicken breast with olive oil. Season generously with garlic powder, oregano, basil, salt, and pepper.
Stuff the Chicken: In each cut, insert a slice of tomato and a slice of mozzarella. Alternate tomato and mozzarella slices for a balanced flavor in each bite.
Bake: Place the stuffed chicken breasts in the prepared baking dish. Bake for 20-25 minutes, or until the chicken is cooked through and the cheese is melted and bubbling.
Garnish and Serve: Remove the chicken from the oven. Top with fresh basil leaves and a drizzle of balsamic glaze, if you like. Serve hot and enjoy!
