For Meatball Subs:
- 3 hoagie rolls
- 12 Italian Meatballs homemade or store-bought
- 1 to 1.5 cups marinara sauce homemade or store-bought
- 3 tablespoons freshly grated Parmesan cheese
- 1 to 1.5 cups thick shredded Mozzarella cheese
- 2 teaspoons dried oregano
For Homemade Meatballs:
- 1/2 lb ground beef preferably 85% lean
- 1/2 lb ground pork
- 1 egg
- 1 thin slice of whole wheat bread soaked in milk, then squeezed dry
- 1/4 cup minced yellow onion
- 1/4 cup freshly grated Parmesan cheese
- 2 garlic cloves pressed
- 1 tablespoon fresh minced basil
- 1/2 tablespoon fresh minced parsley
- 1/2 to 1 teaspoon kosher salt or sea salt to taste
- 1/8 to 1/4 teaspoon black pepper to taste
Prepare the Meatballs:
In a large bowl, combine ground beef, ground pork, egg, bread (soaked and squeezed), onion, Parmesan cheese, garlic, basil, parsley, salt, and pepper.
Roll the mixture into approximately 12-15 meatballs, about 1.5 inches in diameter.
Preheat a skillet on medium heat and apply a thin layer of oil.
Brown the meatballs on all sides, about 5-6 minutes, then transfer them to a preheated oven at 375°F (190°C) for 10-12 minutes, or until cooked through.
Prepare the Marinara Sauce:
As the meatballs cook, warm the marinara sauce in a small saucepan over medium heat.
Once the meatballs are cooked, add them to the saucepan and gently stir to coat the meatballs in the sauce.
Assemble the Subs:
Preheat your oven’s broiler. Cut the hoagie rolls lengthwise but leave them intact on one side to hold the fillings.
Place 4 meatballs inside each roll and spoon marinara sauce generously over the meatballs.
Top each sub with freshly grated Parmesan cheese, shredded mozzarella, and a sprinkle of dried oregano.
