Ingredients

For Meatball Subs:

  • 3 hoagie rolls
  • 12 Italian Meatballs homemade or store-bought
  • 1 to 1.5 cups marinara sauce homemade or store-bought
  • 3 tablespoons freshly grated Parmesan cheese
  • 1 to 1.5 cups thick shredded Mozzarella cheese
  • 2 teaspoons dried oregano

For Homemade Meatballs:

  • 1/2 lb ground beef preferably 85% lean
  • 1/2 lb ground pork
  • 1 egg
  • 1 thin slice of whole wheat bread soaked in milk, then squeezed dry
  • 1/4 cup minced yellow onion
  • 1/4 cup freshly grated Parmesan cheese
  • 2 garlic cloves pressed
  • 1 tablespoon fresh minced basil
  • 1/2 tablespoon fresh minced parsley
  • 1/2 to 1 teaspoon kosher salt or sea salt to taste
  • 1/8 to 1/4 teaspoon black pepper to taste

Instructions

Prepare the Meatballs:

  • In a large bowl, combine ground beef, ground pork, egg, bread (soaked and squeezed), onion, Parmesan cheese, garlic, basil, parsley, salt, and pepper.
  • Roll the mixture into approximately 12-15 meatballs, about 1.5 inches in diameter.
  • Preheat a skillet on medium heat and apply a thin layer of oil.
  • Brown the meatballs on all sides, about 5-6 minutes, then transfer them to a preheated oven at 375°F (190°C) for 10-12 minutes, or until cooked through.

Prepare the Marinara Sauce:

  • As the meatballs cook, warm the marinara sauce in a small saucepan over medium heat.
  • Once the meatballs are cooked, add them to the saucepan and gently stir to coat the meatballs in the sauce.

Assemble the Subs:

  • Preheat your oven’s broiler. Cut the hoagie rolls lengthwise but leave them intact on one side to hold the fillings.
  • Place 4 meatballs inside each roll and spoon marinara sauce generously over the meatballs.
  • Top each sub with freshly grated Parmesan cheese, shredded mozzarella, and a sprinkle of dried oregano.

Broil the Subs:

  • Place the assembled subs on a baking sheet and broil in the oven for 2-3 minutes, or until the cheese is melted and bubbly.

Serve:

  • Serve the meatball subs immediately, garnished with additional Parmesan and fresh basil if desired. Enjoy!
