  • 2 tablespoons red curry paste adjust for heat preference
  • 2 tablespoons soy sauce tamari for gluten-free
  • 1 tablespoon lime juice or lemon juice
  • 2 tablespoons olive oil or coconut oil
  • 1 teaspoon turmeric powder or fresh turmeric
  • to taste salt season to taste
  • 1/4 cup fresh cilantro optional for garnish

Step-by-Step Instructions for Thai Coconut Red Lentil Soup

  • In a medium pot, heat 2 tablespoons of olive oil over medium heat. Add one diced onion and sauté until translucent, about 3-4 minutes.
  • Toss in 3 minced garlic cloves and a 1-inch piece of minced fresh ginger. Cook for 1-2 minutes until fragrant.
  • Stir in 2 tablespoons of red curry paste and 1 teaspoon of turmeric powder for about 1 minute.
  • Pour in 1 cup of rinsed red lentils, 4 cups of vegetable broth, and 1 can of coconut milk. Bring to a gentle boil.
  • Once boiling, reduce heat, cover, and let it simmer for about 20 minutes.
  • Remove pot from heat. Blend the soup with an immersion blender until desired consistency.
  • Stir in 2 tablespoons of soy sauce and the juice of one lime. Season with salt to taste.
  • Ladle the warm soup into bowls and garnish with fresh cilantro if desired.

Notes
