  • 2 tbsp Red Thai Curry Paste adjust to taste

  • 2 tbsp Lime Juice freshly squeezed

  • 2 medium Carrots thinly sliced
  • 2 cups Baby Spinach or Bok Choy interchangeable

For Garnish

  • 2 stalks Scallions chopped
  • 1 handful Cilantro optional

  • Heat a splash of cooking oil in a large pot over medium heat. Add minced garlic and grated ginger, sautéing for about 1-2 minutes until fragrant and golden.
  • Stir in the red Thai curry paste and cook for another minute, stirring continually.
  • Pour in the vegetable or chicken broth along with coconut milk, whisking until well combined. Bring to a gentle simmer over medium heat for 4-5 minutes.
  • Incorporate the soy sauce, lime juice, and brown sugar, stirring well. Let it simmer uncovered for about 5-7 minutes.
  • Add thinly sliced carrots, stirring gently and letting simmer for about 3-4 minutes until softened.
  • Drop frozen dumplings into the soup, cooking according to package instructions for 6-8 minutes.
  • Stir in baby spinach or bok choy until wilted, for about 1-2 minutes.
  • Ladle the soup into bowls and garnish with chopped scallions and fresh cilantro.

Notes

Ensure dumplings are fully cooked, and feel free to add extra vegetables or substitute ingredients as desired.
