For the Beef
- 2 pounds pork tenderloin or thick-cut beef chops cubed
- ½ cup flour
- ¼ cup cornstarch
- 2 teaspoons white pepper
- 1 teaspoon salt
- Zip-top bag or sealable container for coating
For the Stir Fry
- 2 tablespoons oil for frying
- 1 stalk broccoli cut into florets
- 1 cup mini carrots diced
- ½ medium onion roughly diced
- 1 red bell pepper roughly diced
- 1 green bell pepper roughly diced
- 1 large zucchini diced
For the Teriyaki Sauce
- ¾ cup soy sauce
- ¾ cup hot water or more if needed
- 1 tablespoon minced garlic
Place the cubed beef in a zip-top bag with flour, cornstarch, white pepper, and salt. Shake until well-coated.
Heat oil in a large skillet or wok over medium-high heat. Add the coated beef cubes in batches, cooking until they are browned on all sides. Remove and set aside.
In the same skillet, add broccoli, carrots, onion, and bell peppers, cooking until they begin to soften. Add zucchini and cook for an additional few minutes.
In a bowl, combine soy sauce, hot water, and minced garlic, then pour the mixture into the skillet with the vegetables.
Return the cooked beef to the skillet, tossing to coat with the sauce. Let simmer until everything is heated through, adjusting seasoning as needed. Serve hot over rice if desired.
