Step-by-Step Instructions for Mexican Pulled Chicken

  • Begin by heating a large skillet over medium-high heat. Pour in a tablespoon of olive oil and allow it to shimmer for about 1 minute.
  • Add 1 chopped onion to the skillet, sautéing it for 3-4 minutes until translucent and fragrant.
  • Stir in 3 minced garlic cloves, cooking for an additional minute until golden.
  • Sprinkle in 1 teaspoon each of ground cumin, chili powder, smoked paprika, oregano, ground cinnamon, and a pinch of cayenne pepper. Stir for 1-2 minutes.
  • Pour in 1 cup of chicken broth, scraping up any browned bits from the bottom of the skillet.
  • Mix in the juice of 1 lime and a cup of tomato sauce, stirring well. Season with salt and pepper to taste.
  • Submerge 2 boneless, skinless chicken breasts into the sauce, cover the skillet and simmer on low heat for 20-25 minutes.
  • Once cooked, remove the chicken and shred it. Return the shredded chicken to the skillet, simmering for another 5-10 minutes.

Notes
