Ingredients
  

  • 4 to 6 medium Russet potatoes
  • 1 pound lean ground beef
  • 1 packet 1 ounce taco seasoning

Toppings:

  • Shredded lettuce
  • Cheddar cheese
  • Sour cream
  • Salsa
  • Guacamole
  • Green onion chopped

Instructions
 

  • Bake the Potatoes: Preheat your oven to 400°F (200°C). Wash the potatoes thoroughly and poke several holes in each with a fork. Arrange them directly on the oven rack and bake for 50 to 60 minutes, or until they are soft when tested with a fork. Once done, take them out of the oven and allow them to cool for a bit.
  • Cook the Ground Beef: As the potatoes bake, warm a large skillet on medium heat. Add the ground beef and cook, breaking it up with a spatula, until browned and fully cooked, about 8-10 minutes. Drain any excess fat, then stir in the taco seasoning and ¼ cup water. Simmer for 3-5 minutes until the seasoning is well incorporated and the sauce thickens.
  • Assemble the Taco Potatoes: Once the potatoes are cool enough to handle, carefully slice them open lengthwise and gently fluff the insides with a fork. Spoon the seasoned ground beef into each potato, making sure to get an even amount in each.
  • Add the Toppings: Now for the fun part! Top each stuffed potato with your favorite taco toppings, such as shredded lettuce, cheddar cheese, sour cream, salsa, guacamole, and green onions.
  • Serve: Serve the Taco Potatoes warm, with extra toppings on the side for customizing. Enjoy this hearty and fun meal that’s sure to be a hit with family and friends.
