Ingredients
  

For the Pasta

  • 8 ounces linguine or fettuccine or spaghetti

For the Protein

  • 2 pieces chicken breasts sliced; or use leftover or rotisserie chicken

For the Sauce

  • 2 tablespoons olive oil or vegetable oil
  • 4 cloves garlic minced; use fresh for best flavor
  • 1 teaspoon red pepper flakes adjust according to spice preference
  • 3 tablespoons soy sauce or tamari for gluten-free

For the Finishing Touch

  • 1 cup Parmesan cheese grated; or use Pecorino Romano or nutritional yeast for dairy-free
  • 1/4 cup fresh parsley chopped; or use basil

Cooking Instructions

  • Bring a large pot of salted water to a vigorous boil. Once boiling, add the linguine and cook for 8–10 minutes, or until al dente. Reserve ½ cup pasta water before draining.
  • In a large skillet, heat 2 tablespoons of olive oil over medium-high heat. Season sliced chicken breasts with salt and pepper. Cook chicken for 4–5 minutes on each side until golden and cooked through. Set aside.
  • In the same skillet, reduce heat to medium and add minced garlic. Sauté for about 30 seconds until fragrant. Add red pepper flakes and soy sauce, allowing to bubble for 1 minute.
  • Return cooked chicken and drained linguine to the skillet. Toss together, adding reserved pasta water if needed to loosen the sauce.
  • Lower the heat and sprinkle grated Parmesan cheese over the mixture. Stir until cheese melts and sauce is creamy. Optionally add more reserved pasta water or heavy cream.
  • Remove from heat. Plate and garnish with chopped parsley. Serve immediately.

Notes

This dish is adaptable; feel free to add any leftover veggies to enhance nutrition and flavor.
