Ingredients
  

For the Gratin

  • 2 medium Sweet Potatoes Peeled and sliced
  • 12 oz Fresh Cranberries Or thawed frozen cranberries
  • 1 cup Heavy Cream Can substitute with coconut cream for vegan option
  • 1 tbsp Brown Sugar Or maple syrup for substitute
  • 1 tsp Cinnamon Optional, can substitute with nutmeg
  • 1 tsp Salt
  • 1 tsp Black Pepper Adjust according to taste
  • 1 cup Gruyère Cheese Shredded, can substitute with cheddar or mozzarella
  • 1 cup Breadcrumbs Use gluten-free breadcrumbs if desired

For the Topping

  • 1 cup Additional Gruyère Cheese For extra rich topping
  • 2 tbsp Parsley Chopped, for garnish

Instructions
 

  • Preheat the oven to 375°F (190°C).
  • Peel and slice about two medium sweet potatoes into 1/4 inch thick rounds and boil for 10-15 minutes until fork-tender.
  • In a greased 9x13-inch baking dish, layer half of the cooked sweet potato slices.
  • Sprinkle half of the fresh cranberries over the sweet potato layer.
  • In a mixing bowl, combine heavy cream, brown sugar, cinnamon, salt, and pepper. Pour half over the sweet potatoes and cranberries.
  • Repeat the layering with the remaining sweet potatoes, cranberries, and cream mixture.
  • Sprinkle shredded Gruyère cheese and breadcrumbs over the top.
  • Bake for 30-35 minutes until the top is golden brown and bubbling.
  • Allow to cool for about 10 minutes before serving.

Notes

This gratin can be prepared a day in advance and baked when ready to serve, and is perfect for holiday gatherings.
