  • 12 ounces Penne Pasta can substitute with rigatoni or rotini

For the Sausage

  • 12 ounces Smoked or Italian Sausage choose mild or spicy

For the Vegetables

  • 2 cups Bell Peppers (red, yellow, or orange) any combo works, avoid green peppers
  • 1 medium Yellow Onion sauté until soft
  • 2 cloves Garlic minced; fresh or garlic powder

For the Sauce

  • 28 ounces Crushed Tomatoes can substitute with diced or fresh tomatoes
  • 2 tablespoons Olive Oil can substitute with vegetable oil
  • to taste Salt
  • to taste Black Pepper

For Garnish

  • 1 tablespoon Fresh Parsley optional

Step-by-Step Instructions

  • In a large skillet over medium heat, pour in a tablespoon of olive oil and let it warm. Add sliced smoked or Italian sausage to the skillet, cooking for about 5-7 minutes until browned and crispy.
  • Using the same skillet, add a bit more olive oil if needed, then toss in chopped yellow onion. Sauté for about 3-4 minutes until the onion turns soft and translucent. Next, add sliced bell peppers and continue to cook for another 5 minutes.
  • Pour in a 28 oz can of crushed tomatoes into the skillet with the sautéed vegetables, stirring to combine. Season your sauce with salt and black pepper to taste. Allow it to simmer gently for 10-15 minutes.
  • While the sauce simmers, bring a large pot of salted water to a boil. Add penne pasta and cook according to the package directions until al dente, usually around 10-12 minutes.
  • Once cooked and drained, add the pasta back to the skillet with the sauce and the browned sausage. Toss everything together, adding a splash of reserved pasta water as needed.
  • Plate your Sweet Pepper Sausage Pasta and garnish with chopped fresh parsley if desired. Serve hot.
