  • 2 tablespoons olive oil
  • 2 tablespoons balsamic vinegar
  • 1 tablespoon honey
  • 2 garlic cloves minced
  • Salt and pepper to taste

  • Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper for easy cleanup.
  • Prepare the cabbage steaks by slicing the cabbage into 1-inch thick rounds. Lay the steaks flat on the baking sheet in a single layer, ensuring they don't overlap.
  • Make the glaze: In a small bowl, whisk together the olive oil, balsamic vinegar, honey, and minced garlic until well combined.
  • Brush the cabbage steaks generously with the balsamic-honey mixture. Ensure each steak is evenly coated.
  • Roast the cabbage steaks in the preheated oven for 25-30 minutes, flipping halfway through the cooking time. The edges should be crispy and caramelized, while the center remains tender.
  • Garnish and serve: Once roasted, remove the cabbage steaks from the oven and sprinkle with fresh thyme if desired. Serve warm as a side dish or as a light vegetarian main course.
