Ingredients
  

  • cup 67 g white granulated sugar
  • cup 67 g brown sugar, tightly packed
  • ¼ teaspoon 1.5 g salt
  • Zest from 1 orange
  • 1 egg white
  • teaspoons 7.5 ml fresh orange juice
  • 2 cups 280 g raw almonds

Instructions
 

  • Prepare for Baking: Preheat your oven to 300°F (150°C). Line a baking sheet with parchment paper or a silicone baking mat to prevent sticking.
  • Mix the Coating: In a small bowl, combine the white granulated sugar, brown sugar, salt, and orange zest.
  • Prepare the Almonds: In a medium bowl, whisk the egg white until frothy but not stiff. Add the fresh orange juice to the egg white and whisk to combine.
  • Coat the Almonds: Add the almonds to the bowl with the egg white and orange juice mixture. Stir well to ensure the almonds are fully coated. Sprinkle the sugar mixture over the almonds, stirring to evenly coat each almond with the sugar and zest.
  • Bake the Almonds: Spread the coated almonds in an even layer on the prepared baking sheet. Bake for 25-30 minutes, stirring halfway through to ensure even roasting. The almonds should be golden and the coating will become crispy as it cools.
  • Cool and Enjoy: Remove the baking sheet from the oven and let the almonds cool completely on the tray. The coating will harden as they cool, giving them a delicious crunch. Once cooled, transfer the almonds to an airtight container for storage.
