Ingredients
  

  • 1 ½ cups roasted sunflower seeds
  • 1 cup vegan honey or a suitable syrup like maple or agave
  • 1 cup granulated sweetener coconut sugar, erythritol, or regular sugar work well

Step 1: Prepare the Caramel Mixture

  • In a medium saucepan, combine the vegan honey and granulated sweetener over medium heat. Stir continuously until the sweetener is fully dissolved and the mixture begins to boil.
  • Once boiling, reduce the heat to low and allow it to simmer for 10-12 minutes, stirring occasionally. The mixture should thicken and develop a caramel-like consistency.

Step 2: Incorporate the Sunflower Seeds

  • Remove the caramel mixture from heat and quickly stir in the roasted sunflower seeds.
  • Mix thoroughly to ensure all seeds are coated in the caramel.

Step 3: Spread the Mixture

  • Pour the mixture onto a baking sheet lined with parchment paper or greased lightly.
  • Using a spatula, spread the mixture evenly into a thin layer.
  • Let it cool at room temperature for at least 1 hour, or until it hardens completely.

Step 4: Break the Brittle

  • Once the brittle is completely cool and firm, break it into pieces by hand or with a knife.
  • Store the pieces in an airtight container at room temperature.
