For the Stir-Fry:
- 300 g 10 oz boneless, skinless chicken thighs or breasts, sliced thinly
- 200 g 7 oz green beans, trimmed
- 1 small carrot julienned (optional for added color)
- 1 small onion sliced
- 2 cloves garlic minced
- 2 tablespoons vegetable oil
For the Sauce:
- 3 tablespoons oyster sauce
- 1 tablespoon soy sauce
- 1 teaspoon sesame oil
- 1 teaspoon cornstarch
- 3 tablespoons water
- ½ teaspoon sugar optional, for balance
Prepare the Sauce: In a small bowl, mix together the oyster sauce, soy sauce, sesame oil, cornstarch, water, and sugar (if using). Stir until the cornstarch is dissolved and set aside.
Cook the Chicken : Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add the chicken slices and stir-fry for 3–5 minutes, or until cooked through and lightly browned. Remove the chicken from the skillet and set aside.
Sauté the Vegetables: Add the remaining tablespoon of vegetable oil to the skillet. Toss in the onion and garlic, sautéing until fragrant (about 1 minute). Add the green beans and carrots (if using) and stir-fry for 3–5 minutes, until the vegetables are tender but still crisp.
Combine and Stir-Fry: Return the chicken to the skillet with the vegetables. Pour the prepared sauce over the mixture and toss to coat evenly. Stir-fry for another 2–3 minutes, or until the sauce thickens and everything is well coated.
Serve: Remove from heat and serve hot with steamed rice or as a stand-alone dish.
