  • 4-5 tablespoons avocado oil for higher smoke point

For the Parmesan Cream Sauce:

  • 5 tablespoons butter divided
  • 10 cloves garlic minced (divided)
  • 1.5 cups heavy cream
  • 2 chopped green onions including both green tops and white bulbs
  • 1 teaspoon of crushed red pepper flakes adjust according to your preference
  • 2/3 cup Parmesan cheese grated/shredded/shaved

Step 1: Prepare and Sear the Beef Cubes

  • Cube the Beef: Begin by cutting your choice of steak into uniform cubes, roughly 1 to 1.5 inches in size. Use a paper towel to pat the pieces dry, then season generously with salt and pepper.
  • Sear the Beef: Heat 4 to 5 tablespoons of avocado oil in a large skillet over medium-high heat. When the oil is shimmering, carefully add the steak cubes in a single layer (you may need to work in batches). Sear each side for about 2 to 3 minutes, or until a beautiful brown crust forms and the beef reaches your desired level of doneness. Once cooked, transfer the steak cubes to a plate and keep them warm.

Step 2: Create the Garlic Butter Sauce

  • Prepare the Garlic Butter: In the same skillet, melt 2 tablespoons of butter and add half of the minced garlic (approximately 5 cloves). Sauté for about 30 seconds until the garlic becomes aromatic, taking care not to let it burn.
  • Coat the Steak Cubes: Return the seared steak cubes to the skillet, tossing them in the flavorful garlic butter. Cook for an additional minute, then remove the beef from the skillet and keep warm.

Step 3: Whip Up the Parmesan Cream Sauce

  • Begin the Sauce: In a medium saucepan, melt the leftover 3 tablespoons of butter over medium heat. Once melted, add the leftover minced garlic (5 cloves) and sauté for 1 to 2 minutes until fragrant.
  • Incorporate Cream and Onions: Gradually pour in the heavy cream, along with the diced green onions and red pepper flakes.
  • Melt in the Parmesan: Once simmering, add the grated Parmesan cheese, stirring until it melts and the sauce thickens, which should take about 3 to 5 minutes. If the sauce appears too thick, add a splash of cream or water to achieve your desired consistency.
