  • Preheat your skillet or grill over medium-high heat for about 5 minutes. Season the flank or sirloin steak generously with salt and pepper, then place it on the hot surface. Cook for 4-5 minutes on each side for medium-rare. Once done, take the steak off the heat and let it rest for 5 minutes to retain its juices.
  • While the steak rests, prepare your corn. If using fresh corn, remove the kernels from the cob. In the same skillet over medium-high heat, add a touch of oil and the corn. Sauté for about 5-7 minutes until it starts to char slightly.
  • In a blender, combine fresh cilantro, heavy cream (or Greek yogurt), and a pinch of salt and pepper. Blend on high until creamy and smooth, about 30 seconds. Adjust consistency with milk if needed.
  • Slice the rested steak into thin strips against the grain. In a serving bowl, layer the sliced steak, chunks of ripe avocado, and the sautéed corn. Drizzle with cilantro cream sauce and gently toss to combine.
