  • 2 lbs bean sprouts
  • 16 oz tofu fried or fresh
  • 10 green onions cut into 2-inch pieces
  • 4 cloves garlic finely chopped
  • 2 tablespoons canola oil
  • 2 tablespoons soy sauce
  • 3-4 peppers Thai peppers for heat, jalapeños for mild spice, or bell peppers for sweetness

  • Prep the Ingredients: Rinse and drain the bean sprouts. Cut the tofu into bite-sized pieces if using fresh tofu, or slice the fried tofu into smaller chunks. Prepare the green onions, garlic, and peppers according to the recipe.
  • Heat the Oil: In a large skillet or wok, heat the canola oil over medium-high heat until shimmering.
  • Cook the Aromatics: Add the chopped garlic and peppers to the hot oil. Stir-fry for about 30 seconds until fragrant, being careful not to burn the garlic.
  • Add the Tofu: Toss in the tofu and stir-fry for 2-3 minutes, allowing it to absorb the flavors and brown slightly.
  • Cook the Bean Sprouts and Green Onions: Add the bean sprouts and green onions to the skillet. Stir-fry for 3-4 minutes, stirring continuously to ensure even cooking.
  • Season: Drizzle the soy sauce over the stir-fry and toss well to coat. Adjust the seasoning with additional soy sauce or salt if desired.
  • Serve and Enjoy: Remove from heat and serve immediately. This dish is best enjoyed hot alongside steamed rice or as a topping for noodles.
