For the Sauce:
- 1 tablespoon soy sauce
- 2 teaspoons dark soy sauce
- 2 teaspoons Shaoxing cooking wine
- 1 teaspoon sugar
- 1 teaspoon grated fresh ginger
For the Beef Mince:
- 200 g 7 oz pork or beef mince
- 1 teaspoon salt
- ½ teaspoon sugar
- ¼ teaspoon white pepper
For the Stir-Fry:
- 400 g 14 oz green beans or snake beans, cut into bite-sized pieces
- 2 cloves garlic thinly sliced
- 1 red chili sliced (adjust to taste)
Prepare the Sauce : In a small bowl, whisk together the soy sauce, dark soy sauce, Shaoxing cooking wine, sugar, and grated ginger. Set aside.
Season the Beef Mince : In another bowl, combine the pork (or beef) mince with salt, sugar, and white pepper. Mix well.
Cook the Green Beans : Heat a tablespoon of oil in a large wok or skillet over medium-high heat. Add the green beans and stir-fry for 4–5 minutes until they are tender-crisp and slightly blistered. Remove from the wok and set aside.
Cook the Beef Mince : In the same wok, add a little more oil if needed. Add the seasoned mince and cook over high heat, breaking it up with a spatula until browned and cooked through (3–4 minutes).
Combine and Season : Add the garlic and sliced red chili to the wok, cooking for 1 minute until fragrant. Return the green beans to the wok and pour in the prepared sauce. Toss everything together and stir-fry for another 2–3 minutes until the sauce coats the beans and beef mince evenly.
Serve : Transfer the stir-fry to a serving dish. Serve hot with steamed rice for a complete meal.
