  • 1 cup yellow or sweet onions Shallots can be used for a more intense flavor.
  • 1 clove garlic (optional) Use minced fresh garlic or garlic powder for extra flavor.

Step-by-Step Instructions

  • In a small bowl, combine 1 cup of warm water with 2 tablespoons of sugar and 2 teaspoons of active dry yeast. Stir gently and let it sit for 5-10 minutes until foamy and bubbly.
  • Heat 2 tablespoons of olive oil in a skillet over medium heat. Add 1 cup of diced yellow or sweet onions and sauté for about 8-10 minutes until soft and golden.
  • In a large mixing bowl, whisk together 4 cups of all-purpose flour and 2 teaspoons of salt. Once the yeast mixture is foamy, add it to the flour along with 2 tablespoons of olive oil.
  • Turn the dough out onto a lightly floured surface and knead for 8-10 minutes until smooth and elastic.
  • Gently fold in the sautéed onions and 1.5 cups of shredded cheese. Knead just enough to incorporate the mix.
  • Transfer the dough to a greased bowl, cover with a towel and let it rise for about 1 hour or until doubled in size.
  • Punch down the dough, shape it into a loaf or divide into smaller rolls, placing them into a greased baking pan.
  • Cover with a towel and let the dough rise again for 30-45 minutes while preheating the oven to 375°F (190°C).
  • Bake for 25-30 minutes until golden brown and sounds hollow when tapped on the bottom.
  • Allow to cool in the pan for 5 minutes, then transfer to a wire rack to cool completely before slicing.
