Ingredients
- 2 tins butter beans drained and rinsed
- 1 tsp chili flakes
- 200 ml water
- 120 ml olive oil
- 1 brown onion finely chopped
- 3 garlic cloves finely grated
- 1 tablespoon chipotle paste
- 300 g plum tomatoes roughly chopped
- 1 bay leaf
- 15 grams of fresh flat-leaf parsley minced finely
- 50 g feta cheese optional
- Sea salt and freshly ground black pepper to taste
- Tortilla chips pita chips, or bread for serving (optional)
Instructions
- Sauté the onion and garlic: Heat the olive oil in a large pan over medium heat. Add the finely chopped onion and cook for 5-7 minutes, until soft and translucent. Stir in the grated garlic and cook for another minute until fragrant.
- Add the chipotle paste and tomatoes: Stir in the chipotle paste, cooking for a minute to release the smoky flavor. Then add the roughly chopped plum tomatoes and cook for 5-7 minutes until they soften and break down into the sauce.
- Simmer the beans: Add the butter beans, chili flakes, water, and bay leaf to the pan. Mix all the ingredients together and heat until it reaches a simmer. Lower the heat and cook for 15-20 minutes, stirring occasionally, allowing the flavors to meld together.
- Season and garnish: Once the beans have cooked and the sauce has thickened, remove the bay leaf. Stir in the chopped parsley and season with sea salt and freshly ground black pepper to taste.
- Serve and enjoy: If using feta, crumble it over the beans before serving for an extra layer of flavor. Serve the smoky chipotle butter beans with tortilla chips, pita chips, or warm bread, or enjoy it on its own as a hearty dish.
