- 1 tbsp olive oil
- 600 g casserole steak cut into large chunks
- 1 large onion peeled and chopped
- 6 rashers streaky bacon roughly chopped
- 2 garlic cloves peeled and chopped
- 325 g carrots peeled and chopped
- 300 ml red wine
- 250 ml beef stock
- 2 sprigs fresh thyme
- Steamed cabbage to serve
- Mashed potatoes to serve
Brown the Beef: In a large skillet, heat the olive oil over medium heat. Add the beef chunks and brown on all sides, about 4-5 minutes. Transfer the browned beef to the slow cooker.
Prepare the Bacon and Vegetables: In the same skillet, add the chopped bacon and cook until it begins to crisp. Add the onion, garlic, and carrots, and cook for an additional 3-4 minutes until softened.
Deglaze with Wine: Pour the red wine into the skillet, scraping up any browned bits from the bottom.
Add to Slow Cooker: Transfer the bacon, vegetables, and wine mixture into the slow cooker.
Cook: Set the slow cooker to low and cook for 6-8 hours, or until the beef is tender and the flavors have melded beautifully.
Serve: Remove the thyme sprigs before serving. Ladle the beef bourguignon over mashed potatoes with steamed cabbage on the side. Enjoy!
