Once cooked, remove the skillet from the heat and allow it to cool for a moment.
Prepare the Filling: In a large mixing bowl, combine the ricotta cheese (or tofu ricotta), Parmesan, mozzarella, chopped basil, and parsley. Add the cooked spinach mixture and stir until well blended.
Assemble the Roll-Ups: Place each lasagna noodle in a single layer on a clean countertop or cutting board. Spread a thin layer of the spinach and cheese filling along each noodle. Carefully roll up each noodle and place it seam-side down in a greased baking dish.
Add Marinara and Bake: Pour the marinara sauce evenly over the roll-ups, covering each one generously. Tent the dish with aluminum foil and place it in the preheated oven for 20 minutes. Afterward, take off the foil and continue baking for another 10 minutes, or until the cheese is melted and bubbling.
