- 2 tablespoons olive oil
- 2 chicken breasts
- 3 large cloves garlic minced
- A 2-inch section of fresh ginger skin removed and finely chopped.
- 2 teaspoons ground coriander
- 2 teaspoons smoked paprika
- 3 baby bok choy halved
- Salt and pepper to taste
- Fresh parsley and chili flakes for garnish optional
In a spacious skillet or frying pan, warm the olive oil over medium heat.
Season the chicken breasts with salt, pepper, ground coriander, and smoked paprika on both sides.
Sear the chicken in the hot pan, cooking for about 5-6 minutes per side, until golden brown and cooked through. Once done, remove the chicken from the pan and set it aside to rest.
Sauté the garlic and ginger in the same pan for 1-2 minutes until fragrant.
Add the baby bok choy, cut-side down, and cook for 2-3 minutes until slightly wilted. Season with salt and pepper.
Return the chicken to the pan, nestling it among the bok choy, and cook everything together for another 2-3 minutes until the flavors meld.
Serve hot, garnished with fresh parsley and chili flakes for an extra kick, if desired.
