Ingredients
  

  • 2 tablespoons olive oil
  • 2 chicken breasts
  • 3 large cloves garlic minced
  • A 2-inch section of fresh ginger skin removed and finely chopped.
  • 2 teaspoons ground coriander
  • 2 teaspoons smoked paprika
  • 3 baby bok choy halved
  • Salt and pepper to taste
  • Fresh parsley and chili flakes for garnish optional

Instructions
 

  • In a spacious skillet or frying pan, warm the olive oil over medium heat.
  • Season the chicken breasts with salt, pepper, ground coriander, and smoked paprika on both sides.
  • Sear the chicken in the hot pan, cooking for about 5-6 minutes per side, until golden brown and cooked through. Once done, remove the chicken from the pan and set it aside to rest.
  • Sauté the garlic and ginger in the same pan for 1-2 minutes until fragrant.
  • Add the baby bok choy, cut-side down, and cook for 2-3 minutes until slightly wilted. Season with salt and pepper.
  • Return the chicken to the pan, nestling it among the bok choy, and cook everything together for another 2-3 minutes until the flavors meld.
  • Serve hot, garnished with fresh parsley and chili flakes for an extra kick, if desired.
