Ingredients
  

  • Dried chow mein noodles or spaghetti: 8 oz (225 g)
  • Vegetable oil: 2 tablespoons 30 ml
  • Boneless skinless chicken breast or thighs: 1 lb (450 g), sliced thin
  • Shredded green cabbage: 2 cups 150 g
  • Shredded carrots: 1 cup 110 g
  • Sliced bell pepper any color: 1/2 cup (75 g)
  • Garlic: 3 cloves minced
  • Fresh ginger: 2 teaspoons 10 g, minced
  • Soy sauce: 1/4 cup 60 ml
  • Oyster sauce: 2 tablespoons 30 ml
  • Hoisin sauce: 1 tablespoon 15 ml
  • Sesame oil: 1 teaspoon 5 ml
  • Chicken broth: 1/4 cup 60 ml
  • Green onions: 2 stalks sliced, for garnish
  • Sesame seeds: Optional for garnish

Instructions
 

  • Cook the Noodles : Bring a large pot of water to a boil. Cook the chow mein noodles (or spaghetti) according to package instructions. Drain, rinse under cold water, and set aside.
  • Prepare the Sauce : In a small bowl, whisk together soy sauce, oyster sauce, hoisin sauce, sesame oil, and chicken broth. Set aside.
  • Cook the Chicken : Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add the sliced chicken and stir-fry until fully cooked and slightly golden, about 4–5 minutes. Remove from the skillet and set aside.
  • Sauté the Vegetables : In the same skillet, heat the remaining tablespoon of vegetable oil. Add the minced garlic and ginger and sauté until fragrant, about 30 seconds. Then add the cabbage, carrots, and bell peppers. Stir-fry for 3–4 minutes until the vegetables are tender but still crisp.
  • Combine Ingredients : Return the cooked chicken to the skillet. Add the cooked noodles and pour the prepared sauce over the mixture. Toss everything together thoroughly, cooking for an additional 2–3 minutes to ensure the noodles are coated and heated through.
  • Garnish and Serve : Remove from heat, garnish with sliced green onions and sesame seeds (if using), and serve immediately. Enjoy your homemade chicken chow mein!
