Ground Turkey and Vegetables
- 1 pound lean ground turkey
- 1 ½ teaspoons fresh ginger minced
- 3 cloves garlic finely minced
- 2 cups coleslaw mix
- 2 green onions sliced
- Cooked rice or noodles for serving
- Hoisin sauce and sesame seeds to drizzle and sprinkle on top as a flavorful garnish.
Sauce
- ⅓ cup water
- ⅓ cup of beef broth or chicken broth for added depth and richness in flavor.
- ¼ cup low-sodium soy sauce
- 1 tablespoon brown sugar
- 1 teaspoon sriracha adjust to taste
- 1 teaspoon sesame oil
- 1 tablespoon cornstarch
Prepare the Sauce: In a small bowl, whisk together water, beef or chicken broth, soy sauce, brown sugar, sriracha, sesame oil, and cornstarch until smooth. Set aside.
Cook the Turkey: In a large skillet over medium heat, cook the ground turkey, breaking it up with a spatula until browned and fully cooked. Add minced ginger and garlic, cooking for an additional 1-2 minutes until fragrant.
Add Coleslaw Mix: Stir in the coleslaw mix and cook for 2-3 minutes until the cabbage is slightly softened but still crisp.
Add the Sauce: Pour the prepared sauce over the turkey and vegetables. Stir and let simmer for 2-3 minutes, until the sauce has thickened and coats the turkey and veggies evenly.
