  • 12 large eggs
  • 16 oz cottage cheese ~2 cups
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • ¼ tsp ground black pepper
  • Pinch of salt
  • 2 cups fresh spinach chopped
  • 1 cup cherry tomatoes quartered

  • Preheat Oven: Begin by preheating your oven to 350°F (175°C). Grease a 9x13-inch baking dish or line it with parchment paper for easy clean-up.
  • Cook the Sausage: In a skillet over medium heat, cook the ground turkey sausage until browned and fully cooked.
  • Prepare the Egg Mixture: In a large mixing bowl, crack the eggs and whisk until fully beaten. Add in the cottage cheese, garlic powder, onion powder, black pepper, and a pinch of salt. Stir until everything is well combined.
  • Add the Veggies: Fold in the chopped spinach and quartered cherry tomatoes into the egg mixture. Stir gently to ensure the vegetables are evenly distributed.
  • Combine and Assemble: Add the cooked sausage into the egg and veggie mixture.
