  • 1 pound Chicken Breast cut into bite-size pieces
  • 1 large Egg binding agent
  • 1 cup Cornstarch for crispy coating

For the Marinade

  • 1/2 cup Vegetable Oil for frying
  • 1 teaspoon Salt kosher recommended
  • 1 teaspoon Pepper white pepper recommended
  • 3 cloves Garlic minced
  • 1 tablespoon Brown Sugar or honey/coconut sugar
  • 2 tablespoons Water to enhance moisture
  • 2 tablespoons Rice Wine or white wine
  • 1/2 teaspoon Baking Soda optional
  • 2 tablespoons Soy Sauce use tamari for gluten-free

For Garnish

  • 2 tablespoons Green Onions chopped, for freshness

Step-by-Step Instructions

  • In a large bowl, mix together minced garlic, salt, brown sugar, water, rice wine, baking soda, and soy sauce to create a flavorful marinade. Add the bite-sized chicken breast pieces and stir until evenly coated. Let the chicken marinate for 30 minutes.
  • While the chicken marinates, crack and beat one egg in a separate bowl. After 30 minutes, drain the marinated chicken and first dip each piece into the egg. Then, generously coat them in cornstarch.
  • Choose a wok or a deep frying pan and pour in enough vegetable oil to cover the bottom generously. Heat the oil over medium-high heat until it sizzles when chicken is added.
  • Carefully add the coated chicken pieces to the hot oil in batches, frying for about 3-5 minutes on each side until golden brown. Transfer to a paper towel-lined plate.
  • Once all chicken is fried, discard most excess oil from the wok, leaving enough to toss the chicken. Season with salt and pepper to taste and add chopped green onions. Toss and serve hot.

Notes

Avoid overcrowding the frying pan to maintain crispiness and use fresh ingredients for the best flavor.
