  • 2 tablespoons Olive Oil for searing

  • 1 cup Apple Cider key ingredient
  • ½ cup Chicken Broth or White Wine for deglazing
  • 1 tablespoon Dijon Mustard adds tang
  • 3 cloves Garlic minced

For the Vegetables

  • 1 piece Red Onion sliced
  • 2 pieces Honeycrisp Apples sliced

For Seasoning

  • 1 teaspoon Onion Powder
  • 1 teaspoon Garlic Powder
  • 1 teaspoon Smoked Paprika or regular paprika
  • 1 teaspoon Fresh Thyme or ⅓ dried
  • 1 teaspoon Fresh Rosemary or ⅓ dried
  • to taste Salt

Step-by-Step Instructions

  • Season the chicken thighs with onion powder, garlic powder, smoked paprika, thyme, salt, and pepper. Let sit for 10 minutes.
  • In a skillet, heat olive oil over medium-high heat. Sear the chicken thighs skin-side down for 6-8 minutes until golden.
  • Flip and cook for an additional 2-3 minutes, then remove chicken from skillet.
  • In the same skillet, add sliced red onion and Honeycrisp apples. Sauté for 5 minutes until onion is translucent.
  • Reduce heat and add butter, let melt. Pour in apple cider, broth, and mustard, then stir in garlic. Simmer for 2-3 minutes.
  • Preheat oven to 375°F. Nestle seared chicken back into skillet among the veggies, then roast for 25-30 minutes.
  • For a thicker sauce, mix cornstarch with water, stir into sauce, and simmer for additional 2-3 minutes.

Notes

This dish is best enjoyed fresh but works well for leftovers. Store in airtight containers for optimal freshness.
