Ingredients
  

For the Chicken

  • 2.5 to 3 lbs Chicken, bone-in Thighs, drumsticks, or leg quarters for optimal flavor.
  • 1/4 cup Avocado or Olive Oil Any cooking oil can be used.
  • Sea Salt Adjust according to taste.
  • Ground Black Pepper Adjust according to taste.

For the Aromatics

  • 3 medium Shallots Thinly sliced; onions can be used as substitute.
  • 20 to 25 whole Garlic Cloves Adjust for milder flavor.
  • 1 small bunch Fresh Thyme Dried thyme can be substituted.
  • 3 to 4 sprigs Fresh Rosemary Dried rosemary can also work.

For the Broth & Wine

  • 1/2 cup Chicken Broth Vegetable broth can be substituted.
  • 1/2 cup White Wine Use Chardonnay or Pinot Grigio; lemon juice and broth can replace for non-alcoholic.

Step-by-Step Instructions

  • Preheat your oven to 400°F (204°C) for even cooking.
  • Line a large casserole dish with Reynolds Wrap® Heavy Duty Foil.
  • Spread sliced shallots and half the garlic cloves across the bottom of the dish, and sprinkle with thyme and rosemary.
  • Place chicken on top, drizzle with oil, season with salt, pepper, and add the remaining garlic and thyme.
  • Pour chicken broth and wine around edges of the pan, avoiding contact with the chicken.
  • Roast uncovered for about 1 hour, until skin is golden brown and the internal temperature reaches 165°F (74°C).
  • Let rest for a few minutes before drizzling pan sauce over chicken before serving.

Notes

Pat chicken dry before seasoning for crispy skin. Adjust garlic according to preference. If broiling, watch closely to prevent burning.
