Cook the ramen noodles: Boil the ramen noodles in a pot of water until they are just tender. Drain and set aside.
Prepare the beef and vegetables: In a large skillet or wok, heat the vegetable oil over medium-high heat. Add the sliced beef and cook for 3-4 minutes until browned.
Cook the aromatics: In the same skillet, add the minced garlic and sliced onion. Sauté for 1-2 minutes until fragrant and softened.
Stir-fry the vegetables: Add the bell peppers, carrots, and broccoli to the skillet. Stir-fry for 3-5 minutes until the vegetables are tender-crisp.
Combine the ingredients: Return the beef to the skillet with the cooked noodles. Pour in the beef broth, soy sauce, and optional oyster sauce. Stir well to combine.
Add final seasonings: Drizzle the sesame oil over the mixture, and season with salt and pepper to taste. Let everything cook together for an additional 2-3 minutes until the broth slightly reduces and the flavors meld together.
Serve: Garnish with sliced green onions and sesame seeds before serving hot.
