For the Meatloaf:
- 1 lb ground beef 80-85% lean
- 1 lb ground pork or additional ground beef
- 1 packet French onion soup mix about 28 g
- 1 cup breadcrumbs
- 2 large eggs
- 1/2 cup milk
- 1/2 cup of grated Gruyère or Swiss cheese
- 1 medium onion finely diced
- 1 teaspoon garlic powder
- 1/2 teaspoon black pepper
- 1/2 teaspoon salt
For the Topping:
- 1 large onion thinly sliced
- 2 tablespoons butter
- 1 teaspoon of sugar optional, to aid in caramelizing the onions
- 1/2 cup beef broth
- 1/2 cup of shredded Gruyère cheese or Swiss cheese
Prepare the Meatloaf Mixture:
In a large bowl, combine the ground beef, ground pork, French onion soup mix, breadcrumbs, eggs, milk, shredded cheese, finely diced onion, garlic powder, black pepper, and salt.
Stir thoroughly until all the ingredients are fully combined.
Prepare the Caramelized Onion Topping:
As the meatloaf bakes, melt the butter in a skillet set over medium heat.
Add the thinly sliced onion and cook, stirring occasionally, until the onions are soft and golden brown (about 15-20 minutes).
If you prefer sweeter onions, sprinkle with the optional sugar halfway through caramelizing.
Pour in the beef broth, allowing it to simmer until the liquid reduces slightly, creating a flavorful onion mixture.
Add the Topping and Finish Baking:
Once the meatloaf is cooked, remove it from the oven and carefully spread the caramelized onions over the top.
Sprinkle the remaining shredded Gruyère cheese over the onions.
Place the meatloaf back in the oven and bake for another 5 to 10 minutes, or until the cheese is melted and bubbly.
Serve:
