Ingredients
  

  • 4 large eggs
  • 1/4 cup plain low-fat Greek yogurt
  • 1/4 cup mayonnaise use vegan mayonnaise if desired
  • 1/4 cup flour gluten-free blend or regular all-purpose
  • 1 teaspoon baking powder use gluten-free if needed
  • 1 teaspoon cornstarch
  • 1 pound cabbage about 6 cups thinly sliced
  • 1 teaspoon salt or to taste
  • Pinch of black pepper
  • 1 1/3 cups mozzarella cheese grated
  • Butter for greasing the baking dish
  • Freshly chopped parsley for garnish

Instructions
 

  • Preheat and Prepare Baking Dish: Preheat your oven to 375°F (190°C). Grease a 9-inch pie dish or baking dish with butter to prevent sticking.
  • Prepare the Cabbage: Thinly slice the cabbage into strips. For uniform slices, use a sharp knife or a mandoline slicer. Set the cabbage aside.
  • Make the Batter: In a mixing bowl, whisk together the eggs, Greek yogurt, and mayonnaise until smooth. Add in the flour, baking powder, and cornstarch, and whisk until well combined. Season with salt and a pinch of black pepper.
  • Combine Ingredients: Add the sliced cabbage and grated mozzarella to the batter. Mix until the cabbage is evenly coated with the batter.
  • Transfer to Baking Dish: Pour the cabbage mixture into the prepared baking dish, spreading it out evenly.
  • Bake the Pie: Place the dish in the preheated oven and bake for 30–35 minutes, or until the pie is set and golden brown on top.
  • Garnish and Serve: Allow the pie to cool slightly, then sprinkle with freshly chopped parsley for a pop of color and added flavor. Cut into slices and serve warm.
