Tomato Mixture

  • 2 cups Ripe Tomatoes Use heirloom or vine-ripened for best flavor.
  • 1/4 cup Fresh Basil Chopped; parsley can be a substitute.
  • 2 cloves Garlic Minced; garlic powder is an alternative.
  • 2 tablespoons Olive Oil Extra virgin is ideal.
  • 1 tablespoon Balsamic Vinegar Red wine vinegar can be used.
  • to taste Salt
  • to taste Pepper

Cheese Mixture

  • 8 ounces Cream Cheese Softened; Greek yogurt can be used for lighter version.
  • 4 ounces Feta Cheese Crumble; goat cheese is a suitable alternative.

Preparation Steps

  • Prepare the Tomato Mixture: Dice ripe tomatoes and place in a bowl. Add minced garlic, chopped basil, olive oil, balsamic vinegar, salt, and pepper. Allow to marinate for at least 10 minutes.
  • Make the Cheese Mixture: In another bowl, combine cream cheese and feta cheese. Blend until smooth. If too thick, add olive oil to adjust texture.
  • Assemble the Dip: Spread the cheese mixture in a serving dish. Spoon the marinated tomato mixture on top evenly.
  • Serve and Garnish: Garnish with fresh basil leaves. Serve with crackers, pita chips, or toasted baguette.

Notes

This dip can be prepared ahead of time; combine mixtures just before serving for best flavor.
