- 4 beef chops about 1 inch thick
- Salt and pepper to taste
- 2 tablespoons olive oil
- 1 medium onion chopped
- 3 cloves garlic minced
- 1 can 14 oz crushed tomatoes
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- 1 tablespoon of sugar optional, to counteract acidity
- ¼ cup beef broth or water
- Fresh parsley chopped (for garnish)
Season the beef chops with salt and pepper on both sides. In a large skillet, heat olive oil over medium-high heat and sear the beef chops until browned on each side. Remove and set aside.
In the same skillet, add the chopped onion and sauté until softened. Stir in the minced garlic and sauté for another minute.
Stir in the crushed tomatoes, dried oregano, dried basil, and sugar (if using) and pour in the beef broth. Mix well.
Return the beef chops to the skillet, spooning the tomato sauce over them. Cover and simmer on low heat for 20-25 minutes, or until the beef is tender and the sauce has thickened.
Top with freshly chopped parsley and present while warm.
