Ingredients
  

  • 4 beef chops about 1 inch thick
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 1 medium onion chopped
  • 3 cloves garlic minced
  • 1 can 14 oz crushed tomatoes
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1 tablespoon of sugar optional, to counteract acidity
  • ¼ cup beef broth or water
  • Fresh parsley chopped (for garnish)

Instructions
 

  • Season the beef chops with salt and pepper on both sides. In a large skillet, heat olive oil over medium-high heat and sear the beef chops until browned on each side. Remove and set aside.
  • In the same skillet, add the chopped onion and sauté until softened. Stir in the minced garlic and sauté for another minute.
  • Stir in the crushed tomatoes, dried oregano, dried basil, and sugar (if using) and pour in the beef broth. Mix well.
  • Return the beef chops to the skillet, spooning the tomato sauce over them. Cover and simmer on low heat for 20-25 minutes, or until the beef is tender and the sauce has thickened.
  • Top with freshly chopped parsley and present while warm.
