  • 1 medium onion thinly sliced
  • 1 bell pepper thinly sliced (optional, for added color and crunch)
  • 2 cloves garlic minced
  • 1- inch piece of fresh ginger minced
  • 2 tablespoons soy sauce
  • 1 tablespoon oyster sauce optional for enhanced umami
  • 1 tablespoon rice vinegar
  • 1 teaspoon cornstarch mixed with 2 tablespoons water for thickening sauce
  • 1 tablespoon of sesame seeds optional, for a finishing touch
  • Green onions sliced (for garnish)

Instructions
 

  • Prep the Vegetables: Start by washing and slicing the mushrooms, onion, and bell pepper. Mince the garlic and ginger.
  • Heat the Oil: In a large pan or wok, heat the vegetable or sesame oil over medium-high heat.
  • Sauté the Aromatics: Incorporate the chopped garlic and ginger into the sizzling oil. Stir-fry for about 30 seconds to release their fragrance, being careful not to burn them.
  • Cook the Vegetables: Add the onions and bell pepper (if using) to the pan, and stir-fry for about 2-3 minutes until they start to soften.
  • Add the Mushrooms: Add the sliced mushrooms to the pan and stir-fry for 5-7 minutes until they release their moisture and start to brown. Cook until the mushrooms are tender.
  • Add the Sauces: Pour in the soy sauce, oyster sauce (if using), and rice vinegar. Stir everything together to coat the mushrooms and vegetables in the flavorful sauce.
  • Thicken the Sauce: If you'd like a thicker sauce, add the cornstarch slurry (cornstarch mixed with water) to the pan. Stir for another 1-2 minutes until the sauce thickens.
  • Garnish and Serve: Season with salt and pepper to taste. Garnish with sesame seeds and green onions, and serve hot with rice or noodles.
