Ingredients
  

  • 1 medium-sized cabbage diced or shredded
  • 6 slices of bacon chopped
  • 1 medium onion diced
  • 2-3 cloves garlic minced
  • Salt and pepper to taste
  • 1 tablespoon apple cider vinegar optional
  • 1/2 teaspoon red pepper flakes optional, for heat

Instructions
 

Cook the bacon:

  • In a large skillet, cook the chopped bacon over medium heat until it becomes crispy.
  • Once cooked, use a slotted spoon to remove the bacon and set it aside, leaving the rendered bacon fat in the pan.

Sauté the onions and garlic:

  • In the same skillet with the bacon fat, add the diced onion and cook until softened, about 3-4 minutes.
  • Add the minced garlic and sauté for an additional minute, until fragrant.

Add the cabbage:

  • Add the chopped or shredded cabbage to the skillet, stirring well to combine it with the onions and garlic.
  • Season with salt and pepper to taste. Cook the cabbage for 8-10 minutes, stirring occasionally, until it becomes tender but still has a slight crunch.

Add optional ingredients:

  • If desired, stir in the apple cider vinegar for a tangy brightness and the red pepper flakes for a bit of heat.
  • Cook for an additional 2 to 3 minutes to let the flavors blend together beautifully.

Combine and serve:

  • Once the cabbage is cooked to your liking, stir the crispy bacon back into the skillet.
  • Mix everything together, taste, and adjust seasoning if necessary. Serve hot as a delicious side dish to accompany any meal.
