Sausage and Veggies Skillet: A 30-Minute, One-Pan Wonder

A quick and easy one-pan meal made with cookedsausage, sweet corn, fresh bell peppers, and zucchini, seasoned with chilipowder and finished with fresh cilantro. Perfect for a busy weeknight dinner!

Ingredients
  

  • 2 cups corn kernels from about 3 cooked ears of corn
  • 1 tbsp olive oil
  • 12 oz sausage cooked, such as Cajun sausage, andouille sausage, or smoked sausage
  • 1 large red bell pepper diced
  • 1 large zucchini sliced
  • ½ tsp chili powder
  • Fresh cilantro chopped (for garnish)

Instructions
 

Prepare the Ingredients:

  • Cut the cooked sausage into bite-sized rounds or slices.
  • Dice the red bell pepper and slice the zucchini into thick rounds.

Cook the Sausage:

  • In a large skillet, heat 1 tablespoon of olive oil over medium heat.
  • Add the sliced sausage and cook for 3-4 minutes until the sausage is browned and slightly crispy on the edges.
  • Remove the sausage from the skillet and set aside.

Cook the Vegetables :

  • In the same skillet, add the diced bell pepper and zucchini.
  • Cook for 4-5 minutes, stirring occasionally, until the vegetables are tender but still crisp.

Add the Corn and Seasoning:

  • Stir in the corn kernels and sprinkle with ½ teaspoon of chili powder.
  • Continue cooking for 2-3 minutes until the corn is warmed through and the seasoning is evenly distributed.

Combine and Serve:

  • Add the cooked sausage back into the skillet and stir to combine everything.
  • Let the mixture cook for another 2 minutes to heat the sausage through.
  • Remove from heat and garnish with freshly chopped cilantro. Serve hot and enjoy!
