Ingredients
  

  • 400 g salmon fillets cut into 2 cm cubes
  • 2 cups broccoli florets
  • 2 tablespoons olive oil
  • 1 tablespoon low-sodium soy sauce
  • 1 tablespoon honey
  • 2 garlic cloves minced
  • Juice of 1 lemon
  • Salt and pepper to taste
  • Sesame seeds optional, for garnish
  • Green onions finely chopped (optional, for garnish)

Instructions
 

  • Preheat the Oven: Preheat your oven to 400°F (200°C). Cover a baking sheet with parchment paper or aluminum foil to facilitate easy cleanup.
  • Prepare the Marinade: In a small bowl, whisk together the olive oil, low-sodium soy sauce, honey, minced garlic, lemon juice, salt, and pepper until well combined.
  • Marinate the Salmon: Place the salmon cubes in a shallow dish or bowl and pour half of the marinade over them. Gently toss to coat the salmon evenly. Let it marinate for 10-15 minutes while you prepare the broccoli.
  • Season the Broccoli: In a separate bowl, toss the broccoli florets with the remaining marinade to coat them evenly.
  • Bake the Broccoli: Roast the broccoli in the preheated oven for 10 minutes.
  • Cook the Salmon: After 10 minutes of roasting the broccoli, remove the baking sheet from the oven and push the broccoli to one side. Place the marinated salmon bites on the other side of the baking sheet. Return the sheet to the oven and bake for an additional 10-12 minutes, or until the salmon is cooked through and flakes easily with a fork.
  • Garnish and Serve: Once the salmon and broccoli are cooked, remove the baking sheet from the oven. Transfer the salmon and broccoli to a serving platter. Optionally, sprinkle sesame seeds and finely chopped green onions over the salmon for added flavor and presentation.
  • Enjoy: Serve the salmon bites and roasted broccoli with rice, quinoa, or as is for a light, healthy meal.
