For the Salisbury Steak Patties:
- 1 1/2 tsp oil
- 3/4 cup onions minced
- 1 lb 93% lean ground beef
- 1 lb 93% lean ground turkey
- 1/2 cup of plain breadcrumbs or gluten-free alternatives
- 1 large egg
- 1 large egg white
- 1/4 tsp kosher salt
- 1/8 tsp ground black pepper to taste
For the Mushroom Gravy:
- 2 cups beef broth
- 8 oz sliced mushrooms
- 2 tbsp all-purpose flour or gluten-free flour blend
- 2 tbsp tomato paste
- 1 tsp red wine vinegar
- 2 tsp Worcestershire sauce to taste
- 1/2 tsp mustard powder
- 1/4 cup water
Step 1: Prepare the Patties
In a skillet, warm 1/2 teaspoon of oil over medium heat.
Add the minced onions and sauté for 4 to 5 minutes, or until they are softened and translucent. Remove from heat and allow them to cool for a moment.
In a large mixing bowl, combine the ground beef, ground turkey, breadcrumbs, egg, egg white, cooked onions, salt, and pepper.
Form the mixture into 6-8 equal-sized patties, shaping them into oval or round shapes.
Heat the remaining 1 tsp oil in the same skillet over medium heat.
Cook the patties for about 4-5 minutes per side, or until browned and cooked through.
Step 2: Make the Mushroom Gravy
In the same skillet, add the sliced mushrooms and sauté for 3-4 minutes until they release their moisture and begin to brown.
Sprinkle the flour over the mushrooms and stir to combine.
Add the tomato paste, red wine vinegar, Worcestershire sauce, mustard powder, and water. Stir well to combine.
Gradually add the beef broth, stirring constantly to avoid lumps.
Let the gravy simmer for 5-7 minutes, until thickened.
Step 3: Combine and Serve
Return the cooked patties to the skillet with the mushroom gravy, spooning the gravy over the top of the steaks.
Let everything simmer together for another 5 minutes to allow the flavors to meld and the patties to absorb some of the gravy.
Garnish with freshly chopped parsley, if desired, and serve the Salisbury steak hot with your favorite sides.
