Ingredients
  

  • 2 pounds of beef chuck diced into 1-inch cubes
  • 1/4 cup all-purpose flour
  • 2 tbsp olive oil
  • 2 large onions chopped
  • 4 cloves garlic minced
  • 4 large carrots peeled and sliced
  • 3 medium russet potatoes peeled and chopped into chunks
  • 4 cups beef broth
  • 1/2 cup tomato paste
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • Salt and pepper to taste
  • 2 tbsp Worcestershire sauce
  • 1 cup frozen peas
  • 2 tablespoons of freshly chopped parsley for garnish

Instructions
 

  • Prepare the Beef: In a large mixing bowl, toss the beef cubes with the flour, coating each piece evenly.
  • Sear the Meat: Warm olive oil in a skillet set over medium-high heat. Add the flour-coated beef in batches, searing each side until browned. This step is optional but adds depth to the stew’s flavor.
  • Assemble Ingredients in Slow Cooker: Place the browned beef, onions, garlic, carrots, and potatoes into the slow cooker. Pour in the beef broth, then stir in the tomato paste, thyme, rosemary, and Worcestershire sauce.
  • Slow Cook: Cover and let it cook on low for 7-8 hours, or on high for 4-5 hours. The beef should be tender, and the vegetables should be soft.
  • Add Final Ingredients: Approximately 30 minutes prior to serving, stir the frozen peas into the slow cooker. Stir gently and let cook until peas are heated through.
  • Garnish and Serve: Once done, ladle the stew into bowls and garnish with fresh parsley for a pop of color and flavor.
