  • Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
  • Carefully slice the sweet potatoes into ½-inch rounds.
  • In a large mixing bowl, combine the sweet potato rounds with olive oil, salt, black pepper, and smoked paprika.
  • Spread the seasoned sweet potato rounds in a single layer on the lined baking sheet.
  • Slide the baking sheet into your preheated oven and roast for 25–30 minutes, turning at the halfway mark.
  • Once roasted, let the rounds cool slightly on the baking sheet.
  • Arrange the roasted rounds on a serving platter and sprinkle crumbled feta cheese over the top.
  • Drizzle the honey over the feta-topped sweet potato rounds.
  • Sprinkle chopped parsley over the dish and serve warm or at room temperature.
