Broccoli:
- 12 ounces broccoli stem sliced into sticks, head chopped into bite-size florets
- 1 tablespoon vegetable oil or grapeseed oil
Miso Sauce:
- 2 tablespoons white miso paste
- 1 tablespoon soy sauce
- 2 teaspoons sugar or light brown sugar
- 1 teaspoon sesame seeds
- 1 teaspoon sesame oil
Preheat Oven: Preheat your oven to 425°F (220°C). Place a sheet of parchment paper on the baking tray to simplify cleanup.
Prepare the Broccoli: Toss the broccoli florets and sliced stems with the vegetable or grapeseed oil, making sure they are evenly coated. Spread the broccoli in a single layer on the prepared baking sheet.
Roast the Broccoli: Roast the broccoli in the preheated oven for 15–20 minutes, or until the edges are golden brown and crispy. Give it a quick stir halfway through roasting to promote even cooking.
Make the Miso Sauce: While the broccoli roasts, prepare the sauce. In a tiny bowl, whisk together the white miso paste, soy sauce, sugar, sesame seeds, and sesame oil until the mixture is smooth and fully blended.
Coat the Broccoli: Once the broccoli is done roasting, transfer it to a large bowl. Pour the miso sauce over the broccoli and toss to ensure it's evenly coated.
Serve: Transfer to a serving dish, garnish with additional sesame seeds if desired, and serve warm.
