Ingredients
  

  • 1 tablespoon olive oil
  • 12 ounces of Italian sausage removed from casings – roughly equivalent to 3 links.
  • 10 oz potato gnocchi
  • 1 cup heavy cream
  • cup chicken broth
  • 1 cup pumpkin puree
  • 3 cloves garlic minced
  • 4 oz fresh spinach
  • 2 tablespoons fresh sage chopped
  • 2 tablespoons fresh thyme
  • Salt and coarsely ground black pepper to taste

Instructions
 

Cook the Sausage:

  • Heat a large skillet over medium heat and add 1 tablespoon of olive oil.
  • Once hot, add the Italian sausage (with casings removed).
  • Break the sausage into small crumbles as it cooks, stirring occasionally until browned and cooked through (about 5-7 minutes).

Prepare the Gnocchi:

  • In the same skillet (without wiping it), add the potato gnocchi.
  • Stir frequently and cook until the gnocchi is golden brown and slightly crispy on the outside, about 3-4 minutes.

Make the Creamy Pumpkin Sauce:

  • Add the minced garlic to the skillet and sauté for 1 minute until fragrant.
  • Pour in the chicken broth, heavy cream, and pumpkin puree.
  • Mix thoroughly and heat the blend until it reaches a gentle simmer.
  • Season with chopped sage, thyme, salt, and freshly ground black pepper to taste.
  • Allow the sauce to cook on low for 2 to 3 minutes until it thickens a bit.

Combine Ingredients:

  • Add the fresh spinach to the skillet, stirring it into the sauce until it wilts.
  • Return the cooked sausage to the skillet and stir everything together to coat in the creamy sauce.

Serve:

  • Taste and adjust seasonings as needed.
  • Once heated through, remove the skillet from the heat and serve the creamy pumpkin gnocchi with a sprinkle of additional fresh herbs if desired.
