Ingredients
  

  • 3 tablespoons extra-virgin olive oil
  • 2 tablespoons mayonnaise
  • 2 tablespoons lemon juice
  • 1 tablespoon Dijon mustard
  • Kosher salt and freshly ground pepper to taste
  • 2 14-ounce jars hearts of palm, drained and sliced into ½-inch pieces
  • 1 pint cherry or grape tomatoes halved
  • 1 cup thinly sliced celery
  • 1 cup thinly sliced radishes
  • 1 red onion cut into quarters and finely sliced
  • ¼ cup roughly chopped parsley plus additional for garnish, if desired

Instructions
 

Prepare the Dressing:

  • In a small bowl, whisk together the olive oil, mayonnaise, lemon juice, and Dijon mustard.
  • Season with salt and freshly ground pepper to taste, adjusting as needed. Set aside.

Assemble the Salad:

  • In a large bowl, combine the hearts of palm, cherry tomatoes, celery, radishes, red onion, and parsley.

Toss with Dressing:

  • Drizzle the dressing over the salad and gently toss to ensure all ingredients are well coated.

Serve:

  • Move the salad to a serving bowl or platter, and add extra parsley for garnish if you like.
  • Serve right away, or let it chill in the refrigerator for up to an hour to enhance the flavors.
