Refreshing Hearts of Palm Salad with Lemon Dijon Dressing
A light and refreshing hearts of palm salad withcherry tomatoes, radishes, and a zesty lemon Dijon dressing. Perfect as a sidedish or light lunch!

- 3 tablespoons extra-virgin olive oil
- 2 tablespoons mayonnaise
- 2 tablespoons lemon juice
- 1 tablespoon Dijon mustard
- Kosher salt and freshly ground pepper to taste
- 2 14-ounce jars hearts of palm, drained and sliced into ½-inch pieces
- 1 pint cherry or grape tomatoes halved
- 1 cup thinly sliced celery
- 1 cup thinly sliced radishes
- 1 red onion cut into quarters and finely sliced
- ¼ cup roughly chopped parsley plus additional for garnish, if desired
Prepare the Dressing:
In a small bowl, whisk together the olive oil, mayonnaise, lemon juice, and Dijon mustard.
Season with salt and freshly ground pepper to taste, adjusting as needed. Set aside.
Assemble the Salad:
In a large bowl, combine the hearts of palm, cherry tomatoes, celery, radishes, red onion, and parsley.
Serve:
Move the salad to a serving bowl or platter, and add extra parsley for garnish if you like.
Serve right away, or let it chill in the refrigerator for up to an hour to enhance the flavors.
