Ingredients
  

  • 3 medium cucumbers halved lengthwise and thinly sliced
  • 2 ripe but firm avocados diced
  • 1 small red onion thinly sliced
  • 1/3 cup plain Greek yogurt
  • Juice of 1 fresh lemon
  • Small handful of fresh dill finely chopped
  • 1/2 tsp garlic powder
  • Sea salt and freshly cracked black pepper to taste (approximately 1/4 teaspoon of each).

Instructions
 

  • Prepare the Vegetables: Start by slicing the cucumbers and onions as thin as possible to ensure even texture. Dice the avocados into bite-sized cubes.
  • Prepare the Dressing: In a small bowl, combine Greek yogurt, lemon juice, garlic powder, chopped dill, sea salt, and black pepper. Whisk thoroughly until the mixture is smooth and well blended.
  • Toss the Salad: In a large salad bowl, combine the sliced cucumbers, avocados, and red onion. Gently pour the yogurt dressing over the top and toss everything lightly to coat, making sure the avocado remains intact.
  • Serve: Serve immediately as a refreshing side dish, or chill it in the refrigerator for about 10–15 minutes to enhance the flavors. Garnish with extra dill if desired.
